    Any guidelines on how to prep pears for pressing. I’ve heard in general freezing fruit before placing it in the chipper/press helps break down the cell walls and results in better sugar extraction, does that apply to pears? Should they be at edible ripeness before freezing or doesn’t it matter? Will pears that are over-ripe for eating still make good cider?
